IBIC Group’s Frozen Minced Molokhia is finely chopped Corchorus olitorius leaves — the format specifically required for traditional Egyptian molokhia soup preparation. “Minced” molokhia (also described as “chopped” or “fine-cut”) is produced by running harvested fresh molokhia leaves through fine-cut processing to produce a uniform 3–8mm chopped leaf particle — the precise texture that creates the characteristic silky, mucilage-rich consistency of authentic Egyptian molokhia soup when cooked in chicken or rabbit stock with garlic and coriander.

The minced format is distinguished from the whole-leaf format (see Molokhia Leaves, Product 9) in that it is ready for immediate soup preparation with no further preparation required. The fine cut maximises the release of molokhia’s natural mucilage during cooking, creating the thick, silky soup body that is the hallmark of authentic Egyptian molokhia and that consumers raised on the dish expect precisely.
