Egyptian potatoes (Solanum tuberosum) from the Nile Delta are selected for the high dry-matter content (19–22%) essential for a crispy exterior and fluffy interior in the finished product, cut into uniform strips, blanched, pre-fried in vegetable oil to partial doneness, and IQF frozen at -35°C.
The pre-frying step is what distinguishes frozen French fried potatoes from raw frozen potato strips: the partial fry creates the characteristic golden exterior crust and par-cooked interior starch structure that enables restaurant-quality crispy fries with a final finish-fry of 2–4 minutes in hot oil (or oven-baking at 220°C for 12–15 minutes). IBIC’s frozen French fries can be cooked by two methods. (1) Deep frying: heat vegetable oil to 180–190°C, add frozen fries directly (do not thaw), fry 2–4 minutes until golden and crispy, drain and salt immediately. This produces the best crispy result. (2) Oven baking: preheat oven to 220°C (fan-assisted), spread frozen fries in a single layer on a lightly oiled baking tray, bake 12–15 minutes turning once at 7 minutes. For restaurant-quality crispiness, deep frying is recommended. For health-positioned applications, oven-baking achieves acceptable results with significantly less fat.
